Vegan Pumpkin Chocolate Chip Oat Bars

Ingredients: 

  • 1 can of organic unsweetened mashed pumpkin

  • 2 cups of rolled oats

  • 1/2 cup of unsweetened apple sauce

  • 1 tsp of baking powder

  • 1/4 tsp of ground nutmeg

  • 1/2 tsp of cinnamon

  • 1/2 tsp of vanilla extract

  • 6 packets of stevia

  • 4 tbsp of coconut sugar (or 3 tbsp of honey or agave or maple syrup)

  • 3/4 cup of vegan Lily's Dark Chocolate Chips (sweetened with stevia)

Directions: 

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Add in all of the ingredients and mix them well.

  3. Line a baking tray with a non-stick spray.

  4. Add the mixture onto the tray and spread out evenly.

  5. Place into a 350 degree oven for about 25-30 minutes.

  6. Once it is ready, let cool and cut into square bars once completely cooled down.
