Healthy Orange Pound Cake

Ingredients:

  • 2 Cups of Almond Flour

  • 1/4 Cup of Monkfruit

  • 2 Eggs

  • 1/2 Tsp of Baking Powder

  • 1 Tsp of Vanilla Extract

  • Zest and Juice of an Orange

  • Optional: Unsweetened Coconut Shreds as a topping

Instructions:

  1. Preheat your oven to 350 degrees.

  2. Mix all of the ingredients together in a bowl (dry ingredients first, then incorporate wet ingredients) .

  3. Spray a loaf pan with a non stick spray and add the mixed ingredients onto the loaf pan.

  4. Top off the mixture with shredded coconut.

  5. Place into the oven for about 20 minutes (or until you stick a knife in the middle and it comes out clean) and enjoy!
