Chocolate Chip Cookie cake
Ingredients:
3 Cups of Almond Flour
2 Organic, Pasture Raised Eggs
1/3 Cup of Almond Milk
8 Packets of Stevia (or 3 droplets of liquid Stevia)
4 tbsp of Nut Butter of Choice
1/3 Cup of Coconut Sugar
2 tbsp of Melted Coconut Oil
Cinnamon
Drop of Vanilla Extract
Pinch of Pink Salt
1/2 cup of dairy free Dark Chocolate Chips
optional: add 2 scoops of Collagen Peptides for extra protein!*
Instructions:
Preheat your oven to 350 degrees.
In a large mixing bowl, place the dry ingredients (almond flour, cinnamon, salt, stevia, coconut sugar and the collagen peptides*) and give it a toss.
Add in the eggs, the melted coconut oil, the nut butter and the almond milk and mix everything together until everything is nicely incorporated.
Finally, add in the dark chocolate chips into the mix and give it another toss.
In a greased baking sheet or cast iron skillet, place the mix and spread it evenly and flat.
Place into the oven for about 15 minutes and enjoy!
