Vegan Chocolate Chip Walnut Banana Bread

Ingredients:

  • 2 Ripe Bananas

  • 2 and 1/4 cup of gluten free Almond Flour

  • 1/2 cup of unsweetened Apple Sauce

  • 1 tbsp of Peanut Butter

  • 6 packets of Stevia

  • 2 tbsp of melted Coconut Oil

  • 1/2 cup of Lily’s Dark Chocolate Chips (sweetened with Stevia)

  • 1 tsp of Baking Powder

  • 1/2 tsp of Vanilla Extract

  • 1/2 tsp of Cinnamon

  • 1/4 tsp of Nutmeg

  • 1/2 cup of chopped Walnuts

Instructions:

  1. Preheat your oven to 350 degrees, and meanwhile grease a loaf pan with a non stick spray of choice.

  2. Mash the two ripe Bananas in a bowl.

  3. In another large mixing bowl, add your dry ingredients: Almond Flour, Baking Powder, Stevia, Cinnamon, and Nutmeg.

  4. Next, in the large mixing bowl add in the mashed Bananas, the Apple Sauce, Peanut Butter, Coconut Oil, and Vanilla Extract.

  5. Mix all of the ingredients together until everything is combined.

  6. Finally, add in the Chocolate Chips and the Chopped Walnuts, and mix it well.

  7. Once the batter is mixed through, spread it evenly onto the loaf pan. You may top it of with some slices of Bananas if you’d like as well.

  8. Place into the 350 degree oven for 30 minutes, and once it’s ready let cool and enjoy!
