The best Cottage Cheese Pancakes

I keep having these delicious pancakes on repeat because they contain protein and fiber rich carbs to keep my blood sugar levels balanced, keep me satisfied and keep me full until lunch time. I top them off with a light drizzle of honey and sometimes berries for extra fiber and antioxidants!

Ingredients:

  • 1/3 cup of gluten free Oats

  • 1/2 cup of Cottage Cheese

  • 1 organic, pasture raised Egg

  • 1/4 tsp Baking Powder

  • Cinnamon

  • Vanilla Extract

  • Stevia

  • Splash of milk of choice

Instructions: blend all ingredients together, and cook on a sauce pan in medium heat. Once you start to see small bubbles forming, it’s time to flip. Top off with honey or maple syrup if you’d like, and enjoy!
