Mizo Glazed Chinese Eggplant

Ingredients:

  • Chinese Eggplant

  • White Miso Paste

  • Soy Sauce

  • Toasted Sesame Oil

  • Rice Wine Vinegar

  • Maple Syrup

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit

  2. Cut your eggplant in half, and cross hatch the eggplant

  3. Add to a greased baking sheet with the inside of the eggplant facing down, and cook until golden brown for about 30 minutes

  4. Mix the marinade of miso paste, soy sauce, sesame oil, rice wine vinegar and maple syrup in a bowl

  5. Once the eggplant is golden brown, take out and add the glaze on top

  6. Place the eggplant back into the oven facing up for about 10 minutes, take out and then enjoy!
