Raw Chocolate Energy Bites


I love these raw energy balls because they are so versatile- they can be used as a breakfast, snack or even dessert! They are beyond easy to make, they last a while in the fridge, they can be frozen to last even longer, and they sure know how to wow your guests. Best of all, they are raw, vegan and so incredibly good for you that you'll forget you're staying on top of your health streak!

Ingredients:

  • 1 cup of raw Cashews

  • 10 Medjool Dates

  • 1/4 cup of unsweetened Almond Milk

  • 2 tbsp of Chia Seeds

  • 3 tbsp of Cacao Powder

  • A drop of Vanilla Extract

Directions:

  1. Mix all of the ingredients in the processor.

  2. Take the mixture out and place it onto a bowl and cover it.

  3. Place the covered bowl in to the fridge for a couple of hours until the mixture hardens a bit.

  4. After it hardens, take out and roll into quarter-sized balls- I also like to shape them into squared breakfast bars as well!
