Gluten Free Kale Pesto Pizza


This is one of those recipes that is a MUST TRY! For all of you pizza lovers, this healthy, gluten free version is something that you can indulge in without breaking your diet or wellness goals! It came out beyond delicious and I will definitely be making this again. A huge thanks to Simple Mills for creating this amazing Almond Flour Pizza Crust that is vegan, gluten-free, dairy-free, and paleo friendly! I hope you all enjoy my version of a healthy and nutritious pizza! 

For the Kale-Walnut Pesto, mix all of these ingredients in a blender until smooth:

  • Kale

  • Walnuts

  • Olive Oil

  • Water

  • Nutritional Yeast

  • Pink Himalayan Salt

  • Black Pepper

  • Garlic Powder

 

Ingredients For the Pizza:

  • Simple Mills Almond Flour Crust Mix

  • 2 tbsp of Apple Cider Vinegar

  • 2 tbsp of Melted Coconut Oil

  • 6 tbsp of Water

  • Kale Walnut Pesto

  • Chopped Basil

  • Arugula

  • 1/4 sliced Avocado

  • Nutritional Yeast

 

Instructions: 

  1. Preheat the oven to 350 degrees.

  2. In a bowl, whisk together apple cider vinegar, melted coconut oil, and water.

  3. Incorporate the Almond Flour Mix slowly, and keep mixing until it forms into dough.

  4. Place the dough into the freezer for about 5 minutes so it hardens a bit.

  5. Take the dough out of the freezer, and separate into two balls.

  6. Spray a baking sheet with a nonstick spray, place one of the balls of dough, and flatten it out.

  7. Place it into the oven for about 5 minutes.

  8. Take it out of the oven, spread the Kale-Walnut Pesto all over the pizza, add the chopped basil, and place it back into the oven for about 10-15 minutes.

  9. After 10-15, take the pizza out, place the rest of the toppings (Arugula, Avocado, and Nutritional Yeast), serve and enjoy!

Ps. I placed the other ball of dough into the fridge to make it for another day!
