Pesto Zucchini Raviolis
This recipe is by far one of my favorites! It is such a great way to be able to enjoy "raviolis" with lower carbs for those days when your cravings hit but you are looking for lighter and healthier options. And the best part about it? It is SO simple to make! It is one of those recipes that looks sophisticated that will wow your guests, but it only took me about 10 minutes to prepare this lovely dish and another 20 minutes to cook and serve. So I hope you enjoy this as much as I did!
3 tbsp of Ricotta
2 tbsp of Parmesan style Veggie Cheese
Pesto (you can use homemade or the healthiest version of store bought)
With a mandolin, slice the entire zucchini into thin slices.
Get 2 slices of zucchini, and place one on top of the other in the shape of a cross.
In another bowl, mix the stuffing for the raviolis, which includes the ricotta, the veggie parmesan cheese, the egg, the pink salt and black pepper, and the garlic powder.
Spray a baking sheet with a nonstick spray.
Get 1 tbsp of the mixed stuffing, and place it in the middle of the cross that you made with the two zucchinis.
Fold the four sides into the zucchini inwards, flip it over and place onto the baking sheet.
Place a little bit of the pesto on top of each ravioli.
Once all of the raviolis are topped off with the pesto, place into a 360 degree oven for about 20 minutes.
When the raviolis are cooked through, take them out, and sprinkle a little veggie cheese or real parmesan cheese and enjoy!
Step 1: once the zucchinis are sliced with the mandolin, place 2 of them into the shape of a cross one on top of the other.
Step 2: Place 1 tbsp of the stuffing onto the cross you made with the zucchini, and keep doing that until all of your zucchinis slices have stuffing on them.
Step 3: Fold the sides of the zucchini inwards to get this kind of shape, turn it over and place it on a baking sheet lined with a nonstick spray.
Step 4: Place some pesto on top of each ravioli, and into a 360 oven it goes for about 20 minutes!
Step 5: Take out, sprinkle some veggie cheese or parmesan cheese, and enjoy!
