Healthy Nut Butter Chocolate Chip Cookie Cake


This recipe right here went all the way up to being my #1 dessert of all time ! Not only does it taste INCREDIBLE, but it is made using clean, minimal and unprocessed ingredients. This is a treat that is quick and easy to make, and will most definitely please your guests and your taste buds! It's also great for those of you who have kids and want to feed them a delicious tasting treat after school, after dinner, or even for breakfast! 

I personally love to have a little bite after dinner (yes, I have a sweet tooth that calls my name every night), for afternoon snack, and sometimes even for breakfast paired with fresh organic berries.

  • 3 Cups of Almond Flour

  • 2 Organic, Pasture Raised Eggs

  • 1/3 Cup of Almond Milk

  • 8 Packets of Stevia (or 3 droplets of liquid Stevia)

  • 4 tbsp of Nut Butter of Choice

  • 1/3 Cup of Coconut Sugar

  • 2 tbsp of Melted Coconut Oil

  • Cinnamon

  • Drop of Vanilla Extract

  • Pinch of Pink Salt

  • 1/2 cup of dairy free Dark Chocolate Chips

  • optional: add 2 scoops of Collagen Peptides for extra protein!*


  1. Preheat your oven to 350 degrees.

  2. In a large mixing bowl, place the dry ingredients (almond flour, cinnamon, salt, stevia, coconut sugar and the collagen peptides*) and give it a toss.

  3. Add in the eggs, the melted coconut oil, the nut butter and the almond milk and mix everything together until everything is nicely incorporated.

  4. Finally, add in the dark chocolate chips into the mix and give it another toss.

  5. In a greased baking sheet or cast iron skillet, place the mix and spread it evenly and flat.

  6. Place into the oven for about 15 minutes and enjoy!
