Chocolate Chip Cookie Cake


If you could only smell my kitchen right now! I don't know about you, but when I was younger one of my favorite activities with my friends was to go over one of our homes and bake chocolate chip cookies. Sometimes, we wouldn't even get to bake them because we would devour the cookie dough!
 
As my habits changed from when I was younger, I did not want to miss out on these kinds of activities with my friends, which is why i developed this recipe so people from all ages can enjoy one of everyone's all time favorite cookies in a healthy way without the guilt and the sugar crash that comes after it! I hope you all enjoy this delicious treat- it will definitely impress your guests and not to mention that it tastes even better than the real thing!

Ingredients: 

  • 1 can of drained organic Chick Peas

  • 3 tbsp of Honey (substitute for Agave OR Coconut Sugar if you want to make it fully Vegan)

  • Drop of Vanilla Extract

  • Cinnamon

  • 2-3 tbsp of Almond/Peanut Butter

  • 1/4 tsp Baking Powder

  • Lily's Vegan Chocolate Chips

Instructions:

  1. In a processor, blend the Chick Peas, Honey, Vanilla Extract, Cinnamon, Peanut/Almond Butter, and the Baking Powder until you have a smooth, creamy texture.

  2. Spray a baking sheet with a non-stick spray.

  3. Place the mixture into a bowl, and mix in the chocolate chips.

  4. Once the chocolate chips are mixed in, place the mixture onto the baking sheet and spread it out.

  5. Place it into a 350 degree oven until it is golden brown.

  6. Once it is golden brown, take it out, let it cool, cut it into squares and it is ready to serve!
