Healthy Orange Coconut Yerba Mate Pound Cake

I was looking to create a summer recipe, and I decided why not combine my love for Yerba Mate with a summer-y fruit, like a citrus! That’s when the idea of an Orange Coconut Yerba Mate Pound Cake came to me, since I can enjoy it as my breakfast or afternoon with my Mate from Kalmateh, or I can have it as a dessert as well!

The loaf itself is super refreshing, moist, sweet but not too sweet, and it honestly just hits the spot! It makes for such a delicious summer dessert, plus it’s made with healthy, clean and wholesome ingredients for you and your family & friends to enjoy!

Ingredients:

  • 2 Cups of Almond Flour

  • 1/4 Cup of Coconut Oil

  • 1/4 Cup of Unsweetened Almond Milk

  • 2 Eggs

  • 2 Full Droplets of Yerba Mate Extract (or you can sub for 1/2 cup of brewed Yerba Mate from Kalmateh in a French Press)

  • 2 Tsp of Baking Powder

  • 1 Tsp of Vanilla Extract

  • 150 Grams of Greek Yogurt (I used one small container of Siggis Yogurt)

  • 2 Full Droplets of Stevia Extract

  • Zest of an Orange (if you use yerba mate extract rather than the brewed yerba in a French press, you can also add the juice of the orange)

  • Unsweetened Coconut Shreds as a topping


Instructions:

  1. Preheat your oven to 350 degrees.

  2. Mix all of the ingredients together in a bowl.

  3. Spray a loaf pan with a non stick spray.

  4. Add the mixed ingredients onto the loaf pan.

  5. Top off the mixture with shredded coconut.

  6. Place into the oven for 30 minutes.

  7. Once it’s ready, let cook, serve and enjoy!
