Vegan Chocolate Chip Muffins
These muffins are not only delicious, but what I love most about them is that they are made with completely unprocessed ingredients. They are moist, tasty, and vegan so they make for a great snack, breakfast, or dessert! I hope you all enjoy them as much as I do!

Cook time: 30 minutes
Serving size: 12 medium sized muffins
4 small ripe mashed Bananas
1 cup of Almond Flour
2 Flax Eggs
2 tbsp of melted Coconut Oil
Drop of Vanilla Extract
1/2 tsp of Baking Powder
1/3 cup of Coconut Sugar
1/2 unsweetened Almond Milk
1/2 cup of vegan Chocolate Chips (I used Lily's)
Pinch of Cinnamon
Pinch of Nutmeg
Handful of Walnuts (optional)
In a bowl, incorporate the dry ingredients: almond flour, baking powder, coconut sugar, cinnamon and nutmeg. Mix them roughly.
Add in the mashed bananas, the flax eggs, the melted coconut oil, the vanilla extract, and the almond milk.
Mix everything well until you have a creamy, thick mixture.
Add in the chocolate chips and mix it through.
Spray a muffin baking sheet with a nonstick spray, place about 1-2 tbsp of the mixture into each muffin holder, add in one walnut on top of the mix in the muffin holder for decoration, and bake at 350 degree over for about 30 minutes.
Take it out of the oven, let it cool completely, and enjoy!
