Simple, Healthy & Fluffy Gluten Free Pancakes!


For me, using simple ingredients is quite the opposite of boring! I like to consume unprocessed and minimal ingredients, but I also enjoy playing around and getting creative with these kinds of ingredients to create something tasty and satisfying, and never boring! Lately, I typically consume either oats, eggs or some kind of toast in the morning (and sometimes a combination of these as well), so this morning I thought why not combine some of these ingredients to create a breakfast with a different texture/flavor? As a result, I got my Simple, Healthy & Fluffy Gluten Free Pancakes! So delicious and so satisfying!

Prep Time: 2 minutes

Cook Time: 7-10 minutes

Serving Size: Makes for 3 mini Pancakes


  • 1/3 cup of Rolled Oats ( I used gluten free oats from Bob’s Red Mill)

  • 1 organic, pasture raised Egg White (Vital Farms)

  • 2 tbsp of unsweetened Almond Milk

  • 1/4 tsp of Baking Powder

  • Dash of Cinnamon

  • Splash of Vanilla Extract

  • Stevia to your liking


  1. Blend all of the ingredients.

  2. Spray a non-stick spray on a pan and place on low heat.

  3. Add 1/3 of the mixture and cook about 1-2 mins on each side, making sure to flip halfway.

  4. Make sure that in between adding another pancake mixture to the pan that you spray more nonstick so the mixture doesn't stick to the pan.
