Dreamy Chia Pudding


Lately, I have been a huge fan of Chia Puddings. They are one of the easiest breakfasts to make, and they are perfect for those mornings when you want something healthy on the go or when you want something light. Oh, and did I mention that it's vegan and filled with nutritional benefits such as omega 3, fiber, and antioxidants? Chia Pudding is a nutritional powerhouse that makes for the perfect breakfast option because it leaves one feeling light and satisfied. 

Serving Size:


  • 1/2 cup of Chia Seeds

  • 2 cups of unsweetened Almond Milk or full fat Coconut Milk

  • 2 tbsp of Coconut Sugar

  • Drop of Vanilla Extract

  • Cinnamon



  1. Place the chia seeds in a large bowl.

  2. Add the coconut or almond milk, and begin to mix it well.

  3. Add the coconut sugar, the vanilla extract, and the cinnamon and make sure everything is mixed well and that there are no clumps.

  4. Refrigerate overnight.

  5. In the morning, place some of the pudding into a bowl and sprinkle your favorite toppings... Some of my favorites are coconut chips, berries, almond butter, and Purely Elizabeth Granola Chunks!
